Pan Roasted Trout with Nectarine and Parsley Salsa

Ingredients
Serves 4
- 4 trout fillets
- 5 nectarines
- 1 bunch
- 1 lemon
- 2 tsp of olive oil
- Salt and pepper to taste
Method
- Start by dicing up your nectarines into small cubes for the salsa, set aside in a medium sized bowl
- Roughly chop up parsley and juice one lemon and add to the bowl with the nectarines. Mix together well
- To a large pan, add 1 tsp of olive oil and pre-heat to a medium heat. Once heated, add trout fillets skin down
- Cook thoroughly skin side down for 5 minutes until the fillet side starts to go pink. Then flip over and cook for a further 2 minutes. Set aside to rest.
- To a large plate, add your trout fillets skin side up and top with nectarine salsa. Enjoy!
