Ingredients

  • 1kg Maryland debone and cut into bite-size
  • 30ml ginger juice
  • 30ml sake
  • 30ml Kikkoman
  • 20ml sesame oil
  • A touch of salt

Mix well and marinate for 30 mins, then add:

  • All-purpose flour (protect from over-cooking)
  • Potato starch (make the chicken crispy up)
  • Touch the marinated chicken with all-purpose flour first to protect it from overcooking
  • Then touch the potato starch to make the chicken crispy.

Method

  • Fry twice
  • The first-time fry at 160 degrees to cook the chicken
  • Take them out when it turns yellow
  • The second time, fry at 180 degrees to make it crispy
  • This time fry it for only 30 to 40 seconds.
