Fluffy Pancakes

  • 2 cup self-raising flour, sifted
  • 2 tbsp white sugar
  • 1/2 teaspoon salt
  • 1 egg, beaten lightly
  • 2 tablespoon melted butter
  • 1¼ cup milk
  • 1 tablespoon butter, extra


Combine dry ingredients in a large bowl, make a well in the centre and whisk in egg, butter and milk. Do not overmix the batter as it will become tough.

Heat a frypan over medium heat and melt a little butter. Pour 1/4 cup of the batter into pan. Cook for a couple of minutes until bubbles appear on the surface. Turn over and cook one minute more.

Cover to keep warm while you cook the remaining batter.

Serve with ice cream, honey or maple syrup.
