Ditch the Fish

Published 1 June 2026
Next time you grab sushi or sashimi at the Market, you might notice something missing. Those tiny plastic soy sauce fish are being phased out. It's a small change making a big impact.

As part of our commitment to reducing waste, we are officially ditching the fish and removing single use plastic soy sauce containers across the Market.

It might seem like a small change, but these little plastics create a big environmental problem. Because of their size and material, they cannot be recycled through standard systems and often end up in landfill or in our waterways.

The Market is proud to be known as Melbourne’s home of fresh seafood. From oysters shucked fresh onsite to the daily catch at our fishmongers, quality and sustainability have always gone hand in hand.

Phasing out plastic soy sauce fish is one of the ways we are reducing unnecessary waste while continuing to deliver the experience our customers love.

Our fishmongers, Aptus Seafoods, Gem Pier and South Melbourne Seafoods, along with Yoyo Sushi, will no longer offer plastic soy sauce fish.

Instead, you will find easy alternatives across the Market, including

  • Complimentary soy sauce stations near fishmongers
  • The option to bring your own reusable container
  • Or simply enjoying soy sauce at home or at work

This initiative is part of our Environmental Sustainability Strategy 2023 to 2027, which sets out clear targets to reduce waste, minimise single use plastics and improve how resources are used across the Market.

We are also proud to support programs like Shuck Don’t Chuck, where oyster shells from the Market are recycled and returned to Port Phillip Bay to help rebuild vital shellfish reefs. You can learn more about the program via the link below.

It is all about rethinking waste, from removing unnecessary plastics to giving materials a second life.

So next time you visit, join us in ditching the fish and taking a simple step toward a cleaner, healthier future.
